Chef Smith realized that he needed ice cream early on but originally had planned to use some premade ice cream. But when he thought about it, he realized that it would be better to try and make it from scratch than to rely on something prebought.

The dumplings are like Shanghai soup dumplings (Xiaolongbao). They have a flavored broth inside when hot and solidifies as it cools. The peach buns will be served with the pork belly. The tofu and peach dish will be a surprise until the ten minutes mark. That is when Chen will finish the dish.

Chen's wok will also contain hot bean paste, cooking wine and housin sauce.
Ladling hot oil over the duck and pork belly is going to crisp up the skin more. Then both will be place back into the oven to remove the extra oil on top of a cooling rack.

I've read that one of the ways of serving Xiaolongbao is with a small bowl of clear broth. Does anyone know more about it?

Serving Xiaolongbao usually uses a dipping sauce of black vinegar and ginger. About the broth though, I haven't heard much about that. But I understand why. The dumplings are so rich that the vinegar is need to cut the richness. Then a broth could be used to refresh the palate. But that gives me an idea though. Thanks for the suggestion.
