Otha- Fukui-san. I also observed the challenger's behavior on his side of the kitchen, and I must say that he is extremely confident. I asked him if it is because Sanji-san is in his corner today that has given him the extra boost, and he said yes. He futher went on to say that it is always good to have someone back you up, and having Sanji-san here today has been a huge help. Back to you.

*Chen adds the garlic, ginger and green onion to the already simmering pot, follows it with the tomato paste, a touch of the vinegar and a dab of the red bean paste.*
Chen: (to sous chefB) Do you have those fillets yet?
chefB: 6 right? Yes.
Chen: Good.
*Chen pulls out a bowl, scoopes up the octopus fillets into it, pulls out a bottle of white wine, and removing the cork pours it over the octopus. He then adds some soysauce and sets the bowl to the side to marinade.
Chen then goes to the refrigerator, pulls out some cucumbers and sets them next to a bottle of rice vinegar, sugar, red pepper flakes, sesame oil, and a glass bowl.*

Kanou: Fried Rice would be good but is seems a little plain. I hope Chen-san will make some of his hot and spicy octopus dishes.
Hattori: Making octopus Fried Rice will be difficult and could be rubbery in texture in there. If the pieces are small enough it would get over cooked. While if the pieces are too big, they would be not cooked enough. But since the iron chef is making this I’m sure the final product will be okay. I wonder if the challenger will make a typical Italian red wine roasted octopus.

Fukui: Kanou-san, I don't think it's possible for Chen NOT to make a hot and spicy octopus dish tonight. I'm pretty sure one will be underway soon enough.

Chen: (to chefB) Are the curls finished?
ChefB: I haven’t finished preparing all the octopus we have.
*Chen looks.*
Chen: That will be enough for the two dishes I have in mind. Go get the shrimp, clams, and mussels and start cleaning them.
ChefB: Yes sir.
*Chen grabs a tray and going over to the plate selection picks out 6 medium sized clay pots. He puts them into an oven and turns it on low.
Standing up Chen surveys the work being done, ChefA working on the long beans and ChefB cleaning several medium sized shrimp, and looking at the left over octopus begins to smile.
Chen scoops up the octopus and calls for the shrimp that has already been cleaned to the sous chefs surprise. He then crushes some garlic and throws it into a warm pan. The octopus and shrimp go into a food processor followed by the sauteed garlic and some water chestnuts. Quickly cracking an egg and separating the white he throws the egg yolk in on top and turns it on until the entire thing is pureed smooth and forms a ball. Chen then starts scooping it out and forming balls which he lays on a nearby sheet.*

Hattori: I think that the iron chef is making octopus balls. It would go very nice in a hot and spicy stew with winter melon. The spices should warm the stomach while it should refresh the appetite. I'm wondering if the long beans will go into a stir fry. The iron chef seems to be preparing three dishes at the moment.

Otha: Fukui-san. I also noticed that the challenger hasn't made any french dishes too. When I asked him was it his strategy, or was that Sanji-san's influence, he told me that he had to get away from an all french menu today, but Sanji-san's battle against Kobe-san and Hattori-san really helped him prepare for today. Back to you.

Okabe: Fire up the rice cooker! I am making a coconut sauce for the octopus I am cooking. The octopus will be curried and lightly fried, then topped with the coconut sauce over rice.

Kanou: Curry octopus rice seems delicious. I can smell some of the spices here.
Hattori: The iron chef’s octopus ball could be pan fried or made into dim sum of some type. I wonder what kind of sauce will go with the appetizers. I see the challenger is making a south east Asian curry. The coconut milk should tame some of the heat from the Thai chilies. It looks like the challenger is moving away from Western European cooking to more of Asian slant.

*Chen finishes rolling the octopus balls, washes his hands ( ), tastes the flavor of the broth simmering and adds a pinch of salt, checks on the cucumber cubes marinating in the rice vinegar, and begins slicing the cucumber skins into long strips which he then tossed in the cucumber marinade.* Chen: Time on the first pressure cooker? ChefA: 10 minutes. Chen: The long beans? ChefA: Almost finished. Chen: Good. I want a light tempura sauce made as soon as you're finished. Don't forget the pressure cookers. *Chen tosses the last curl of cucumber skin into the marinade, throws the rest away, and taking the cleaned clams, mussles, and shrimp from chefB begins layering them in a large steamer.* Chen: (to chefB) I want 8 egg whites in a large bowl please.
