Otha: Fukui-san. I asked the Iron Chef if he was going to make ice cream today, and he told me that he will have it in his menu today, but he added that he will not use the ice cream machine today. Back to you.

Okabe: OK, my next dish is almost done. Octopus and Seafood soup. It starts out with a tomato base, then capers, onion, scallops, mussels, clams, and octopus are added. White wine cooks them down with lemon juice, spices and garlic, and the baby bok choy is added. I let this cook and then transfered it into ramekins and topped it with some puff pastry glazed with butter and parsley.
Okabe: Now,....dessert? What to make, what to make?!

Otha: Fukui-san. I posed the same question to the challenger, and he told me no way I'm taking that risk. When Himura-san heard the decision, he shook his head in shock. I could tell that he wasn't happy. Back to you.

Fukui: Thanks Ohta! I'm not surprised the challenger isn't making an octopus desert, although that could be a good thing. *laughs* Of course, I'm also not surprised Himura-san is expressing disapproval of the decision, either. It looks like the challenger isn't exactly following the "no limits" philosophy of his mentor.
30 MINUTES HAVE ELAPSED!
Fukui: And with that, half the battle is already finished. Both chefs are moving rather rapidly today. Maybe they should slow down and perfect their dishes.

*Sous chefA is cutting the octopus that came out of the first pressure cooker into flat squares which he is then adding into the bowl with the cucumbers and the rice vinegar marinade.
Sous chefB brings a bowl of creamy dressing over to Chen to taste. Chen pauses in stirring the custard to take a small spoon. Nods his approval and places his custard in the sink as chefB sets the dressing to the side by the already deep fried octopus and shrimp.
Chen takes the tempura mix and begins dipping the remaining octopus curls and dropping them in the hot oil.*
Chen: (passing the bowl to chefB) Make sure to sprinkle them with the salt and Szechuan peppers as soon as they come out of the oil.
*Chen goes over to the broth simmering, tasts it, nods, and adds in 3 whole red chiles.
Chen then calls chefA over and pulls out two pairs of rubber gloves, masks, and eye covers. Both put them on and chefA opens a metal container that was slipped under the counter nearby. He picks up tongs and takes a metal thermos out bringing it over to the sink where Chen is stirring the custard. The lid is taken off and vapor rises from the container.*
Chen: Slowly, I'll stir. As you finish each one pour the next. We need all 5.
*Sous chefA pours the liquid in the thermos into the custard and a column of white condensed water vapor rises from the pot. He pours 5 times each followed by a huge puff of vapor. Chen hands the spoon to him.*
Chen: Keep stirring, make sure and integrate anything left on the sides so it's not to hard.
*Chen strips off his mask and gloves and goes over to check on the rice.

Hattori: I see the iron chef is making a science experiment, liquid nitrogen octopus icecream. I've always wanted to try to make that. But I just hope they stir the icecream enough so that all the liquid nitrogen evaporates otherwise our tasting panel will have a hypothermic mouth. It is a treat to see icecream mad this way but he could have been less dramatic and used the icecream machine. There is still plenty of time to churn it. Have you guys ever had icecream made in this fashion?
Kanou: I have when I went to see a professor friend of mine at his home. Could the octopus be cut up into strips and cooked in sugar syrup like konnyaku?
Hattori: I think that would be interesting, but I doubt the challenger would try something so plain. I would think that the challenger would make something like octopus ink rice pudding with chopped octopus. Small amounts of the ink wouldn't be too bad for color but it would have to be very sweet to cover up the taste of the ink.

*Chen is at the stove with a hot wok. He add in soy sauce, chili sauce, and a touch of rice vinegar. Chen then takes a small teaspoon and dips some octopus ink from a nearby bowl then swirls it in the sauce in the pan, tasts it, nods, and in one move dumps in the bowl of cooked rice. Chen stirs it well with the metal spatula moving it back and forth to coat all the rice with the sauce and moving from the stove with the wok in both hands flips the rice over in midair. He returns to the stove, stirs the rice a few more times, tastes it, and slides it out into a waiting bowl.*

Okabe: My next dish will be octopus wontons. Each taster will get three wontons; one filled with octopus, carrots, water chestnuts, cilantro, black sesame seeds and ginger, and it sits in a tarragon and saffron sauce. The next wonton is filled with very finely chopped octopus, cream cheese, onion, parsley, and truffles. It is fried and served with a homemade sweet and sour sauce. The last wonton skin is made from octopus ink and black truffles to give it a unique color and flavor. It is filled with octopus, tofu, green onion, sun flower seeds, black truffle, and ginger. This one sits in a creamy French truffle sauce.
Okabe: Now, I need ginger, sugar, and lots of chocolate!
