Kanou: I must agree with the rest of the panel. The salmon roe doesn't do anything for this dish. As a palate cleanser it has little effect. It is just fishy and didn't have the effect you planned. This dish isn't refreshing like it was meant to be.

Okabe: I apologize. Next we have Baked Octopus Fettuccine. The octopus is coated in a creamy Parmesan sauce and tossed with fettuccine. Black truffles are added to give this dish another layer of flavor. It is baked and topped with Parmesan cheese, breadcrumb, more black truffle, and parsley. Please enjoy.

Kurimoto: Mmmm, the parmesan goes so well with the octopus. It's not a combination I would have expected to work, but the creaminess of the cheese goes so well with the texture of the octopus. And truffles are always a nice touch. Well done.

This is probably your best dish, Okabe-san. I like the combination of the octopus tossed in with the fettuccine, and everything just melts in your mouth so wonderfully. This is a fantastic dish.

Kanou: I must agree with the panel. This dish is very good, but the octopus is kind of lost in the dish. The baking of the octopus has dried it out making it a bit rubbery. If the sauce was a bit lighter, this dish would have been the best dish so far.

Kanou: I mean, it was just tough. This octopus wasn't as tender as the other dishes. Don't get me wrong, the taste is great but my piece was a little like a rubber band. If the octopus was cooked differently it might have been better. It was just my thinking.

Okabe: We have a tough panel here today! *laughs* OK, moving on, we have our next course which is Octopus, Three Ways. I wanted to show a little something from each part of the globe in this dish, and I think I succeeded in doing so. I also prepared the octopus different ways to show the different flavors of the octopus. First we have some fried octopus, which comes along with a basic marinara sauce or a wasabi and black truffle dipping sauce. The next mini-dish is thinly sliced raw octopus with a sweet mustard sauce on top. Still, on top of the sauce sits sea urchin roe; this will balance out the sweet flavor. Sitting next to this one is another raw octopus dish which completes the second part to this trio. It is thinly sliced octopus topped with lemon juice, olive oil, parsley and Parmesan cheese. It is very light and has a summer feel to it. Last we have a cooked octopus dish. It is alternate slices of octopus (marinated in a cilantro sauce) cucumber, and black truffle. It is plated with caviar and more truffles. As you can see all the colors blend beautifully on this dish. Please enjoy this trio.

Kurimoto: Your sauces for this course go very well with the items with which they are served. I'd have to say that the fried octopus is my favorite of the three.
Kaga: Okabe-san certainly likes truffles doesn't he?

Dreyfuss: Yum! This trio of octopus makes want to make some myself. I especially love the cilantro in octopus.
