Ohta - Squwie-san, Sakai-san appears to be making a sort of casserole with the ingredients he is now working on, rice, cheeses and cubed ham. Sakai-san are you preparing this like a French casserole? I've not seen you using truffles yet in this battle, is there any reason why not? No, Ohta-san, I'm not making a casserole. You'll just have to wait and see what I come up with. *Smiles* I actually have used truffles. They are in the special French pizza that is in the oven. *Sakai takes the sugar and figs off the stove* Sakai: Place this fig sauce in the blender, please. *Sous Chef Ni begins to puree the sauce* *Sakai begins to fill three bowls with each of the three cheeses he selected earlier* Sakai: Rice, please. *Sakai mixes in the cubed ham, spinach and seasonings in with the rice and cheeses* Sakai: These will get coated in panko breadcrumbs before being fried. Sakai: Give me the macaroni, Chef Iti! Sous Chef Iti: Yes, sir. *Sakai begins to add some parmesan cheese to the cream sauce that is bubbling on the stove* Sakai: I need those truffles, too. *Sakai chops several fresh black truffles, then throws them into the cream sauce* *Sakai seasons the sauce, then tastes it* Sakai: Just perfect. Mmm. *Sakai turns the heat down low and adds in the cooked macaroni* Sakai: Chef Iti, cut this fresh ham up, then tell me when you're done. Sous Chef Iti: Yes, sir. Sakai: Time? *Sakai sighs as he wipes a droplet of sweat from his brow*

Ohta - kuiee-san, IC Sakai is really working up a sweat, he will probably be taking his hat off soon, and undoing his gold neck scarf. Hey, I hear girls giggling up in the royal box, they probably will start chanting for Sakai-san to (coughs) take it off.........!

Fukui: Sakai-san, there's twenty seven minutes left in the battle! Ohta, are you okay today? You seem a little... I don't know... off your rocker? Maybe all those fumes from the kitchen are finally getting to you. You sure are gunning for Iron Chef Sakai.... makes me wonder if you put a little cash down on him. Playing the chefs again, big guy?

*Akane pours some olive oil in the blender with the shiso leaves and turns it on.*
*Chef Ken brings the foie gras over to her.*
Himura Akane: Perfect. deglaze the pan with redwine viegar and bring it to me.
*Akane checks on the shiso paste and removes it into a small bowl. She puts a new top on the blender and puts the foie gras that chef Ken seared in with some more olive oil. Chef ken brings her the deglazed pan.*
Himura Akane: Thank you.
*Akane pours the vinegar into the blender and turns it on.*

Hattori: I think the Iron Chef is sticking to more orthodox dishes. One of the dishes looks like a rice ball. Another looks like a macaroni and cheese with ham. I think that the French pizza will be the highlight of today's dishes. There isn't enough time to start anything more elaborate so I think this is going to be the extent of the complexity of these dishes. Some of the challenger's dishes are still unclear to me, but I see a dessert, a wonderful Japanese style soup/stew and salad. The main course though is still a mystery.
Kanoh: The challenger's soup and mysterious main course is something I'm looking forward to eating, but the dessert is a little bit more troublesome. I wondering how the Iron Chef's pizza is going. If is is going to be crispy would the theme ingredients be over cooked, or if it is going to be more bread like. That would be the deciding factor.

Himura Akane: (to chef Aoi) Bring me the chilled tea.
* chef Aoi brings the bowl of tea over and Akane pours it into the ice cream maker.*
Himura Akane: Another 10 minutes should do it. (to chef Ken) How soon before you are finished cleaning the tiger shrimp and fresh shitaki's?
Chef Ken: 5 minutes.
Himura Akane: Good. I should have the skewers ready for you by then... (to chef Aoi) ...and the garnishes?
Chef Aoi: I am almost finished.
Himura Akane: Good. Take the pot of ham off the heat and let it rest until then.
*Akane goes over to the bowls of turkey and ham and begins threading them carefully onto bamboo skewers. She dries each of the sugar cured ham that was marinading in the Umeshu and dips them in raw sugar crystals then sets them to the side.*

Hattori: I never would have thought of green tea icecream The Yakkitori seems to be coming along nicely. I think the Iron Chef might have a good fight on his hands. The salad seems to have a warm dressing made from foie gras. This kind of dressing is French in nature and maybe with ham lardons.
Kanoh: This is going to be a another great dish. The Iron Chef is going to have a challenging up hill struggle. Only his pizza at this point is calling to me from his side.

Ohta - Squiee-san, the dressing the challenger is making is a warm vinegrette containing foie gras, butter, wine, a variety of seasonings and shallots. It is then blended and heated. It will be mixed into the salad.

*Akane takes the smoked ham steaks chef Aoi has taken from the pressure cooker and basts them with the liquid persimmon jelly. She puts the steaks under the broiler.*
Himura Akane: (to chef Aoi) Baste frequently until they are fully glazed. While those are broiling give me a hand with the Gratiné.
*Akane collects 6 shallow, large, white, bowls and with chef Aoi begins arranging the potato rounds in them in a circular pattern. Akane then strains the milk into another pan and whisks some clarified butter in. The enriched milk is then ladled over the potatoes and all the bowls are moved into an oven under the broiler.*
Himura Akane: (to chef Aoi) Keep an eye on the Gratiné as well. Pull them as soon as the surface has carmalized.
(to chef Ken) How are the yakitori coming?
Chef Ken: The raw sugar is glazing the ham like you wanted it too.
Himura Akane: Good. Don't forget to grill the Mochi before starting the other ham and the turkey skewers.
*Akane removes the turkey tenders from their marinade, drys and dips them in a light layer of mochiko flour, and begins wrapping them around metal cannoli tubes.*

*Sakai begins to mix flour, eggs, milk, shortening, salt, pepper, and parmesan cheese together*
*Sakai now adds fresh chives to the mixture*
*Sakai tastes the mix*
Sakai: Perfect.
