*The pork is now marinating in the mixture that Sha-Shan had made, as Jia-Cheng brings up a bowl of pineapple chunks to Chu. He thanks her with a nod, then begins sprinkling salt over the de-winged duck, as Jia-Cheng puts a pressure cooker and a saucier onto the cooktop.*

Hattori: Oh, my mistake. The chicken is on Chen's side. It looks like he's making some type of pineapple glazed chicken wings. What do you think Kurimoto, will this suite you or are you still hoping for a sweet and sour pork from the challenger? Fukui: Uh oh, it looks like we broke Doc Hattori! *laughs* 10 MINUTES HAVE ELAPSED!

*The duck, boned and quartered, has placed on a rack inside the pressure cooker, along with pineapple juice, slices of ginger and a dash of kosher salt. The cooker lid is on and the cooker is over a medium-low flame.*
Chu: "Jia-Cheng, that needs to come out at the 40-minute mark, remember."
*Jia-Cheng now has another large pot on the burner, and dumping a small pouch of powdered gelatin into the liquid-filled saucier.*
Jia-Cheng: "Papa, I'll need a medium bowl and some ice for this."
Chu: "Ach, always so bossy. Just like your mother. Sha-Shan! Go to the freezer and get some ice!"

*Chen is seen writing down a list*
Chen(to assistant): I need you to get me the things on this list, and hurry.
*Assistant runs off to get the ingredents on the list*
*Chen then turns his attention to the chicken wings. Setting cooling racks in a shallow baking pans, Chen then removes the plastic wrap from the marinading chicken. Using a pair of tongs, Chen then sets the wings in the pan, putting them in the oven.*

*Jia-Cheng has carved out a sawtoothed hole at the top of the watermelon, and is scooping out its flesh into a bowl.*
*Beside her, Sha-Shan has set down another large bowl filled with ice, in which is embedded a square baking pan. Jia-Cheng nods to her, and she takes the saucier and pours its contents into the pan.*
*Chu is using a utility knife to mark incision lines into a smaller pineapple. Four others of the same size are on the counter in front of him.*

Ohta: Squeesan! A little wrap up to keep everyone up to date: On Iron Chef Chen's side we saw him writing down these ingredients: Lemon, Lobster, eggs, AP flour, sugar, vinegar, cornstarch, garlic powder, and fresh ginger. Chef Chen told me he was using country ham, in response to Doc Hattori's question.
On Master Chu's side, there are four dishes in the works, with a fifth dish still possible. While the pork slices are marinating in a combination of cornstarch, pineapple juice, light soy sauce and grated ginger, there are many other ingredients out on Chu's side today as well. One dish looks like it will contain jellyfish, jalapeƱo, gelatin powder, and harusame noodles. Another dish in the works has duck, sea salt, long grain rice, eggs, lettuce, bamboo shoots, lemons and limes in it; while the last one contains Watermelon, lychee fruit, rock sugar, mint leaves.
Ohta: Finally, I did get a chance to talk to Master Chu about Kurimoto-san's remarks. Chu told me: "I know that sweet-and-sour pork is a classic Cantonese dish, but with pineapple as the theme ingredient I think it's important to do a variation on the theme, and I think "hot and sour" pork would be something he can look forward to." Now, back to you.

Hattori: That is very interesting. I think we are starting to see chef Chu's menu take shape. We know that he intends to make a salad, pork stir fry, rice, and soup.
I suspect that the duck that went in the pressure cooker will be served with the pineapple rice that is cooking currently. I am a little concerned about his using a pressure cooker with the duck. Duck is very fatty. While the pressure cooker will breakdown the fats and collagen it will also infuse the meat with it. Usually duck is cooked in a way that will wick the fat away from the meat to prevent it from being to greasy.
The jellyfish and harusame noodles will probably be his salad course. I'm not sure how he will tie the pineapple into it if that is the case. It also looks like we may have a fruit soup in the works.
Now Chen's menu is still very much up in the air. I am assuming that the chicken wings will be going through more treatments then just baking especially with him cooking them so soon in the battle. The dry-cured ham he's using can be used in so many ways I can't even begin to guess what he will do with it.
I am a little concerned with his use of lobster though. It would be very easy for the pineapple to overwhelm the lobster completely. Chen-san is going to have to be careful with his preparations of that. Though with the flour out on his side perhaps he intends to batter it. *chuckles*

Fukui: And one quarter of this battle is already ova! Kurimoto-san, you're usually present only for the tasting portion of the battle. What is it like to see these chefs in action on the floor from this perspective?

Chen(to assistant): I need some peanut oil, pork tenderloin, green peppers, sweet pickles and water chestnuts. Go now.
*Chen then takes two pineapples and slices them up into quarter rings.*

*On Chu's side the big pot is now simmering away with watermelon pulp, pineapple juice and water. Chu has just finished showing Sha-Shan how he wants the pineapple and bamboo shoots to be cut, and Sha-Shan is now carving the pineapples as per his instructions.*
Jia-Cheng: "Do you want the soup out at 35, or 40?"
Chu: "With their blast chiller, I think 35. Don't forget, the mint leaves are to be put in whole."
Jia-Cheng: "Yes, papa. What about the tofu idea I suggested?"
Chu: "Well, Sha-Shan seems to be managing the pineapples all right, so . . . yes, we'll try it. Do you want to make the wraps, while I work on the watermelon?"
Jia-Cheng: "All right. How are we doing for time?"
Chu: "I think we can manage it, but time does pass pretty rapidly if we're not careful."

Kurimoto: Well I've seen cooking before in the control room, but the smell is wonderful. I am also a little concerned about the duck, but I have a feeling the challenger will or has a method to prevent this.

*Chen extracts the juice out of the lemon. Filtering the pulp out of the juice, Chen sets the juice aside until it is needed.*
*Assistant returns with the ingredients asked for. Setting aside the pork tenderloin, Chen dissolves cornstarch with a small bit of water before adding sugar, soy sauce, seasoning powder and 1/2 cup of water. Mixing the ingredients thoughly before setting aside.*
Chen: Where is the maranade for the chicken wings?
*One of the assistants points it out to Chen. Taking the maranade, Chen then puts it on a open flame to keep it melted.*

*As Chu scrapes the skin of the hollowed watermelon with his paring knife, carving out the Kitchen Stadium emblem, Jiu-Cheng puts a block of silken tofu on the counter and begins to slice out very thin squares, placing them on a sheet of cellophane.*
*Meanwhile, Sha-Shan continues to hollow out the small pineapples, trimming the extracted cores and reserving the chunks in a glass bowl.*

*As Chu continues to carve the Kitchen Stadium emblem, Sha-Shan starts some knife carving work on some large, uncooked bamboo shoots and some large limes.*
*Meanwhile, Jia-Cheng has placed some diced pineapple and pitted, peeled lychee in a salad spinner and is pumping on the top, to remove excess moisture.*
