That's what you call a hen that is trying to hatch her eggs. Healthy hens will lay 1 egg every 20 or so hours if the tempeture is right. Most of them just walk away. A brood hen will sit on the eggs and incubate them. They don't even have to be her eggs.
They're prized for breeding.

Why do they have to warm their eggs, does it speed up the hatching process some how?

If they don't the chicks die. The eggs have to be kept warm or else. That's why they have incubators for mass production. It's to hard to get that many brooders.

Not what we would call labor. They do cluck when laying. It doesn't take long.
