AC, I've found that once cooked, turkey is fine for a week as long as it's refrigerated promptly.
We had beef tonight - definitely needed a change of pace.

cleaning out the fridge. Probably salad and left over gumbo (from Christmas Eve, my sons idea). I don't want to make anything large since we're going to Twelfth Night on Saturday and it will be a huge feast.

AC, I've found that once cooked, turkey is fine for a week as long as it's refrigerated promptly. Hmm. I didn't know that, HC. Good tip. ....we're going to Twelfth Night on Saturday and it will be a huge feast. What's Twelfth Night, Arrianna? I haven't heard of that. I had seafood paella tonight. It turned out nicely.

Tried doing mushroom bruschetta à la Jamie Oliver (button & cremini mushrooms cooked in olive oil with garlic, sage, salt & pepper, plus a little water, then poured over toasted crusty bread). It worked pretty well, I thought.

We were late getting home, so I made Knorr/Lipton Stroganoff (the pasta side dish, adding cooked beef with a couple of minutes to go to make a meal out of it). It's quick and easy, and hubby loves it.

Barronmore's mom and sister are in an organization called the Adrian Empire (link) which is, and I quote: "a non-profit educational organization dedicated to the study and recreation of Western European culture between the years 1066 and 1603." One of their big feasts of the year is Twelfth Night from the original 12 days of Christmas celebration that used to start on Dec 25th and end on January 6th. If you are curious and want to know if there is anything local to your area you can check here -> Regions and Locations The local celebration involves games like chess, followed by a medieval feast, followed by performances and a game like BINGO only involving Heraldic symbols called Blazons. Tonights dinner is dumplings and rice... and anything else I can scrounge out of the fridge.
