So Michael Psilakis was a contestant for the Food Network Challenge Hot Chefs Category in Miami. He's a Executive Chef of Onera of New York City. Here's the story from the Fashiontribes.com website.
Onera is Greek for dream, what Chef Michael Psilakis has been trying to accomplish by melding Greek traditions & traditional cooking with updated interpretations that highlight the best of the beloved cuisine of his heritage - and showcase the largest Greek wine list in Manhattan.
Located in an Upper West Side townhouse, Onera is an oasis of blues, greens & white. Inside the entrance, the quaint lounge is filled with coffee tables & colorful pillows that seat 20, and glass & steel starburst lamps which cast off soft light. The dining room is a crisp navy and white affair that seats 60, bathed in natural light streaming through the skylights - which creates grace and comfort so you feel like you are in your own home.
Dining options include a tasting menu or a la carte - both are wonderful. To start, try the scrumptious & tasty mussels or scallops, but save room for the outrageously fresh fish with an equally beautiful presentation. The Grilled Branzino is accompanied by artichokes confit and Dandelion greens, an Avgolemono sauce and salt cured Kalamata olives. Seared Creatan spiced Ahi Tuna comes with white radish & snow pea salad “Sour” yogurt, black olive oil and a spicy tomato cocktail to drink.
With Greek accents like sesame & rose, and almond & yogurt, dessert is not optional. Must-tries include: Valhrona Chocolate & Halva; Truffle served with Sweet Tahini Sauce & Toasted Sesame Pagoto (ice cream); and the signature Red Rose Sampling of rose-Infused Crema (similar to panna cotta), Loukoumi (Turkish Delight) and Rose-Petal studded Pagoto, served with a Rose Milkshake.
This meal was Greek to me - in the best way possible.

The secret ingredient is some kind of dough, I don't what kind of dough it is I'm guessing puff pastry dough.
As for Our IC Cat Cora, she was the judge of the Hot Chefs event. And even though Chef Jill Davie won the contest overall, Chef Psilakis is a winner in my book.
