Each time Chen-san is on the RPG, I keep meaning to suggest him saying what area of China any of his dishes are from. In China there are so many different areas and a difference in say styles like Peking, Shezshuan, etc., I can't think of all the various styles, and, there is differences in the north and south areas of China. I think IC Chen would know all these things.

Well, Chinese cuisine can be divided into several regional cuisines, four of which are well-known:
Sichuan (http://en.wikipedia.org/wiki/Sichuan_cuisine) (Chen's background is this cuisine)
Cantonese (http://en.wikipedia.org/wiki/Cantonese_cuisine) (this is the best known in North America)
Hong Kong (http://en.wikipedia.org/wiki/Cantonese_cuisine) (essentially a fusion of Cantonese recipes and Western ingredients)
Mandarin or Beijing (http://en.wikipedia.org/wiki/Beijing_cuisine) (This is an offshoot of Imperial cuisine)
There is also Taiwanese cuisine, which I will argue is as legitimate a regional cuisine as Hong Kong's the next time I play the RPG as a challenger. (My character is going to be Chu Si-hung, the master chef of the movie EAT DRINK MAN WOMAN.)

You know your stuff 1:North 2:South 3:Mix of south and Brit flavor 4:Trully traditional, to counter #3 and preserve a proud haritage 5:like #3, but some spice/herb changes
