I hope nobody minds me starting this thread. Could Ohta ask if Himura is making some Chinese dishes and if he is comfortable with the theme ingredient.

No, I'm not comfortable with the theme! The only exposure that I've had with the theme is in chinese stir-fry, and so my menu today will change that conception, you'll see!

I'm going to be out all today so I will volunteer that I am making 4 dishes and while I will be borrowing ideas from the mainland most of my dishes will more traditional in style.

Cumin Chili Powder Onion Bell Pepper, green Tobasco sauce Jalapeno pepper and beef stock

Arriana: what kind of mushrooms are you using? Matsutake, shittake, or regular button mushrooms? Crimini and Shiitaki's with Enoki waiting to go in. There is also a tray of cornish game hens waiting to be cut up and some spinach by the sink.

Otha, there are two batters for the bamboo shoot rings. One of the batters is just a "business as usual" tempura batter, while the other will have milk, eggs, flour and salt.
