If we have a dish that is supposed to be served cold can we chill it until serving once the count down is over?

I think if you explain it to Ohta, have the chilled dish on the display counter, then whisk it to the blast chiller during the pre-judgement interview, you should be all right.

It doesn't need to be that cold. lol just cool. I hope it would be ok but I really need to know for sure to finish writing my dish descriptions. (Never mind, I sent them anyway.)
In the meantime my interview info:
1. What was my strategy?
"Chef Quan: Well, truffles are never used in Cajun cooking so I just remembered the 3 keys to cooking with truffles; butter, cream, and seafood. I took that and tried to make new versions of Cajun style cuisine. I think I succeeded."
2. Do I think I will win?
"Chef Quan: If we are judged on both creativity and flavor I don't see how I can lose."

1. How's the hour for me?
Oh, it's tough, a have come up with a min. of dishes, it's been a while since...I don't know. I have no clue what the judges might think of my min. creations in that hour.
2. Do you think I will win?
90% sure...we'll see.

Hmmm... this is the first time I was able to get the dish lists and post them before Ohta's interview began. If you guys really want to do the interview, I'll copy and paste my post into Word and we can do those first. I don't mind at all.
