*Assistant 2 checks on the pork belly and paints it again with the same mixture he used before.*
Chen: Good. The pork should be done on time. (Assistant 1) Take the duck out and remove the whole peaches. Then paint the duck again with the sugar peach nectar syrup and put it back into the oven.
*Chen mixes some julienne ginger with black vinegar, soy sauce and a pinch of sugar. He take a taste.*
Chen: It needs more vinegar. There the sauce for the soup dumplings is done.
*Chen takes the peaches from the duck and peals the skin off.*
Chen: Wow it is hot.
*Chen then chops up some spicy pork jerky until the pieces are like the size of sesame seeds.*

*Chen then takes the pealed peaches from the duck and purees them. He then places the puree into a pot to reduce down to a thin sauce.*
Chen: (Assistant 1)Place the peach buns into the second rack of the steamer. Make sure there is enough hot water in the pot. Hmm... Maybe I make a nice drink to go with the banquet.
*Chen purees some of each kind of peach and places them into a distilling setup. The condenser is started and cold water is flowing through it. The receiver is filled with salt and ice.*
Chen: Time to add one of my liquors to the mix to help extract the peach essence.

*Chef Smith goes over to the pot he just set up and throws in some slices of white peaches then takes the pot off the heat.*
Chef Smith: How are those pork chops?
Sous Chef Ari: Coming along fine!
Chef Smith: Do some extra ones just in case!
*Ari pulls out some extra pork chops, and starts to prep them for grilling*
*Adam brings over his assorted vegetables*
Sous chef Adam: Here are your vegetables, chef.
Chef Smith: Thanks.
*Chef Smith mixes together some lemon juice, red wine vinegar, brown sugar, some curry powder, salt and pepper. He puts the vegetables and diced peaches into the mixture, stirs it all together and puts it into the refrigerator. *

Ohta: Fukui-san!
Fukui: Yes, go ahead!
Ohta: The sauce in the pot on the Iron Chef's side contains the pureed peaches and some Chinese cooking wine, five spice powder, and brown sugar. Chen-san tells me it will be like a Hoisin sauce when finished, and that it will slowly cook until it reaches a consistency similar to that sauce. Also, the mixture in the distilling pot contains Laojiao, puree of the different peaches, and lemon grass.
Fukui: Thanks, Ohta!
25 MINUTES HAVE ELAPSED!
Fukui: And there's the twenty-five minute call! We're almost to the halfway mark in this battle.

Doc Hattori: Laojiao is a liquor from Luzou China that is considered one of the three best "old cellar" liquors. It's from a group of drinks aged in special clay cellars that impart their own aromatic flavor to the drink. It's extremely strong at 60% and is known for it's long fruity aftertaste. It is best drunk at room temperature in small cups but is also used to make mixed cocktails with grape or orange juice.
It seems the Iron Chef is trying to infuse the Laojiao with the essence of the peaches to create a new flavor. The lemon grass would add to that flavor as well. You will have to let us know how it tastes Morisan.

Chen: Wow. Strong (Cough). Check the duck.
*Assistant 2 checks the duck.*
Assistant 2: The duck will be done in about five to ten minutes.
*Assistant 2 puts another layer of syrup on the duck.*
*Chen tastes the sauce. Takes a quick stir to check the consistency.*
Chen: Its good. Its done.
*Chen takes it off the stove to cool. Chen takes the soup dumplings from the steamer to take a test taste.
Chen: It ready. It is good. Hot!
*Put the other three on three small plates with dipping sauce and hands it to Ohta.*
Chen: Try this Ohta. Also send it up to Fukui and Hattori.
*Hand the three plates to Ohta to taste and bring up.*

Doc Hattori: That is very kind of him. So the duck will be finished on time for plating and the soup is nearly ready. Chef Smith on the other hand is marinading some vegetables and fruit in the chiller and working on more pork chops. For a theme based on a fruit there seems to be a lot of protein being cooked. Chef Smith: OK, it looks like everything is doing just fine. Time to move on to the skins.
*Chef Smith pulls out a pot and throws in some water, sugar, lemon juice and the peach skins and sets it over medium heat*
Chef Smith: That should be interesting. Adam, I need a sauce for the chops!
Sous chef Adam: Yes, chef!
*Adam puts peaches, chopped onion, molasses, brown sugar, ketchup, red wine vinegar, Worcestershire sauce, minced garlic, minced ginger, salt, and very little bit of chipotle chile in adobo into a blender.*
