Ota - Squie-san, Challenger (IC) Michiba's menu has been written. Sorry but I can't read Japanese so we will have to ask what all he has on it. Oh my goodness, here comes Kandagawa-san over to Michiba's station. (Kandagawa - HEY MICHIBA-SAN, WHAT ARE YOU GOING TO MAKE FOR YOUR ULTIMATE JAPANESE DISH TODAY???). Ota - I warned you, Squeeze-san. This is a crazy audience.

Kobe: Now's my chance to read Michiba's menu....But before I do that, I'll start my next dish, which is a lobster and seafood stew. The stew starts out with sauteed onions, garlic, and both red and green peppers. I let that cook for a bit, and then added some fresh tomatoes, excellent quality red wine, fresh basil, and fresh parsley. While this simmered, I cleaned the mussels and clams. Next I added the lobster meat, along with some fresh shrimp. After that, the mussels and clams were added, and it will continue to cook until all the seafood is cooked perfectly. What seafood stew is complete without garlic bread? The dough for my lobster and garlic bread has risen, and is now in the oven. It is made with finely chopped lobster meat, fresh garlic, parsley, basil, salt and pepper, and olive oil. Then, this mixture is topped on the individual loaves of bread to make a wonderful accompaniment to this dish. Now, what is on that menu?!

Ota - Kuwie-san, I'm going to head back to the royal box where Kandagawa-san is now sitting again after his heckling of Michiba-san. I think he was afraid Michiba was going to get dangerous with the knife he was using on the lobster. I'm here. Hey, Kandagawa-san, what was that about? Kandagawa-san - Hey Ota-san, I just wanted to see what the "god" of Japanese cooking was going to make. Let him know I was here, ya know? Maybe shake him up a bit! Ota - So, I gather you are hoping IC Kobe wins this battle? Kandagawa-san. Naw, he's just a kid, what does he know about cooking. Prince of Pasta. HA! A Japanese chef should make traditional Japanese food. Ota - IC Sakai and IC Chen are cracking up with laughter at Kandagawa-san. There you have it Phooey-san.

He is. I took an opputunity recently to eat at one of his resturants, and he really doesn't pull any punches when he talks with his guests. It is that quality that draws me back again and again when I visit western Japan.
Now I'd like to swing back to Kobe's side. See the sherry being added? The sherry will offer a flavor componet that is different from adding, just any ordanry white wine, or even champane for that matter.

I'm slicing up the beef for the sashimi, pulling off the lobster and cut into chunks, I got some lettuce. I'm fixing to make a miso sauce for the beef.
