*Chen finishes turning over the marinated octopus fillets on the grill and giving a small saucepan a stir hands it back to sous chefA.*
Chen: The same amount of time for the second side, don't let the sauce burn.
(to sous chefB ) You remembered to put the Shellfish on when I said?
ChefB: Yes, it has 3 minutes left.
Chen: Good, pull it then and get the clay pots out of the ovens for plating.
(Chen goes over to a cutting board holding several red glazed octopus fillets and slices them on an angle.
Looking satistifed Chen then moves a wok to a hot burner and adds ingredients from three bottles along with some previously minced ginger. He swirls the pan around, gives it a few stirs and then add's in the prepared long beans. A quick stir fry over high heat and the beans are slid into a large bowl.*
Chen: (to souschefA) The fillets?
ChefA: They're off. The sauce is finished as well.
Chen: Good. It's time to start plating.

*Chen takes some shallow square bowls and piles some of the long beans in it. Then carefully places three slices of the glazed octopus fillet on top.*
Chen: Good.
*Chen goes to the plating table with chefB and begins selecting as chefA puts the warm clay pots on a hot plates with a stand and coals beneath them.*

Otha: Fukui-san. I noticed that Chen-san was too tense, so I asked him if Sanji-san's appearence here was finally getting to him, and he told me, no way. He is going for a sixth dish. I think that the pressure is finally getting to him.

Hattori: Chen-san could make a quick dish in the last 15 minutes. It could be another stir fry or a raw dish. Since this octopus was so fresh a raw dish would be interesting. If he had any liquid nitrogen left he could make octopus icicles.
*Laughing at the thought of octopus flash frozen on a stick*
Kanou: I would be glad to eat the stir fry or sashimi but no frozen octopus today. That would be too weird. It seems like Chen-san is cooking less spicy flavors than usual that may be due to Sanji-san's appearance. The challenger seems to be more adventurous today. He has made dishes that are not from his main cuisine.

Fukui: Octo-cicles? Man alive, Doc, I hope I never have to think about that again!

Okabe: I've boiled the octopus rings, and I am now quickly torching them with the kitchen torch. *Torches* I will now coat them in sugar and ginger, so the taste of the octopus is almost gone. Half of the octopus rings will get a vanilla and coconut coating. They each will get dipped in milk chocolate, and some will get dark chocolate. They're served with a mint and chocolate flavored liquor.

Okabe: Ok, guys, we're almost done. I've got the fettuccine done for the baked octopus fettuccine dish. The fettuccine and octopus are in a creamy Parmesan sauce, and it is kicked up with black truffles. Fresh herbs are added, and it gets topped with bread crumb, Parmesan cheese, parsley and more black truffle.
Okabe: Ooone more dish; if we have time!

Otha: Fukui-san. Sanji-san just opened up to me with his observations. He told me that both chefs are doing very well, but he pointed out that Chen-san is too tense, and if he doesn't relax, he will share the same fate as Kobe-san. Back to you.

*Chen finishes arranging three small bowls by a small bamboo steamer holding the octopus balls resting on strands of seaweed. Two of the bowls have sauce in them already.*
Chen: (to chefA) I want the plum sauce in the third bowl.
*Nearby chefB plates up the dark amber fried rice onto a plate and carefully places a mound of salt & Szichuan pepper tempura octopus on top. Chen comes over and wipes the plate clean then sprinkles some sliced scallions over the top.
Chen calls for the mochiko tempuraed octopus and shrimp and tosses the cream dressing with it. He then plates it and places the canidied walnuts nearby.*
Chen: (to chefB) How is the salad?
ChefB: Diakon radish and cucumber on the inside, octopus on the top right?
Chen: Good.
*Chen pulls three cucumber curls out of the marinade and places them on top, nods, and chefB takes the plate and places it next to the lidded clay pots and other finished dishes.*
Chen: (to chefA) The ice cream please.
*Chen takes the ice cream and taking a spoonful passes it between two spoons until it is a nice oval shape. Then laying it on the octopus and shrimp sprinkles it with some of the candied walnuts, wipes the plate, and nods in satisfaction.
Chen takes it over to the other plates and counts.*
Chen: Long Beans w/ Barbecued Octopus, Octopus Balls w/ one.. two.. Three Sauces, Octopus Chili Fried Rice w/ Salt & Pepper Octopus, Szechuan Octopus and Cucumbers Salad, Honey Walnut Octopus & Shrimp w/ Ice Cream
What am I missing... *looks at the clay pots* ahhhh.... Hot & Sour Red Bean Bouillabaisse.
That's it.
*Chen takes a kitchen towel and mops his brow as the 30 second countdown begins.*
Chen: Whew...

Okabe: Ok, last dish. I've added some octopus into a blender and am adding heavy cream and papaya to the mixture. It will be served cold with salmon roe.
*Last minute plating*
Okabe: OK, we're done. Good job guys.

Hattori: From what I've seem today, the challenger might have a slight advantage. The dishes the iron chef made do not contain his usual creativeness and the octopus is not being used to its optimum use. The dessert is the most concerning. The seafood taste will most likely be over bearing and be like fish with vanilla icecream. The octopus would have been better used as crumbled pieces or candied rather than be fried with shrimp. I predict that the Barbecued Octopus dish and fried rice will go over nicely with the panel. The Bouillabaisse will be the deciding dish. The challenger’s deciding dishes will be the Seafood Soup and the pasta.
*Shaking his head at the color of the fried rice*
Kanou: I more inclined to agree with Doc. If the challenger’s dessert is done properly shouldn’t be fishy. The dessert would be like the snacks at a Japanese bar dipped in chocolate. I’m interested in Chen-san’s Bouillabaisse. It should be thick and rich. I am also very interested in the challenger’s Seafood soup. Comparing both of them will be the key.
*Rubbing his chin at the thought of the icecream.*
