Kishi: The bisque is a thicker version of a soup so the pumpkin is a great ingredient to this dish. The sweetness is very steady, and not overpowering. *yum*

"Now for this next dish, I thought it'd be good for the pumpkin to step back a little, and see how well it plays with others, in this case pork tenderloin and Chinese black beans. The cider braise will keep the black beans from overpowering the stew with spiciness, and we also baked the stew instead of boiling it so that all the disparate flavours mellow together and create something rich.
"When I saw that Kitchen Stadium had these rolls I knew that they would go very well with the stew as European bread bowls. While small pumpkin bowls might have made a bigger impression visually, I felt this dish needed the pumpkin to take just one step back, as a break of sorts between courses."

Kishi: The tenderlion really accentuates with pumpkin well. I love pumpkin bowls myself. Cider is not overpowering at all. It's great.

It's sweet, and savory... and just a little salty. I like it very much. The Bread bowl goes perfectly too.
*dips the bread core into the stew*
I was afraid this would be just another soup and thought it a little strange you were feeding us two soups in a row. But really, this is like a baked stir fry only served with bread instead of rice. It's almost, well, French.
I like it very much. I can taste a hint of the pumpkin in everthing. Is that from baking it all together?

Okada: I must agree and disagree with Ishida-san. It is a bit sweet and savory, but I think the black beans over power this dish. I feel the texture of the pumpkin but the true taste is lost. This dish is lighter and good after all the heavier earlier dishes. But I don't think I would order this dish at your place.

"Now, for this dessert dish, I've always been struck by how the spices for pumpkin pie are actually quite similar to the spices for apple pie. So when the opportunity came to use apple pie filling in combination with the pumpkin, I thought the chance was worth taking. The use of pineapple, chocolate chips and banana will complement this flavor, but I actually chose them because ice cream is the type of dish that you <i>really</i> want to play with. And I want to end this meal with a bit of fun for the tasters."

Kishi: Well, you surprised us. I have it's very subtile of what you did. Pumpkin and Banana sort of match, I can tell the chocolate stands out.
