Barber: "Right."
*Barber puts a stockpot on the stove and cranks the heat to medium-high. He takes a large onion and begins dicing it.*
Barber: "Can't have a proper bisque without onions."
*He pours a dollop of olive oil into the pot and quickly dumps the diced onions in.*

*Barber now takes two sticks of celery and dices them quickly, as Isao comes over with a small bowl filled with pumpkin cubes. Barber peers into the bowl.*
Barber: "That looks to be the right amount."
*The celery and pumpkin go into the pot. Barber now dashes over to the refrigerator, takes out a 3-pound pork tenderloin, jogs to the nearest cutting board and begins to cube it.*

Ota - Kukee-san, I've still not gotten any information out of the Iron Chef. Ishinabe-san, can you give me a couple seconds? Just curious to know what your plan is for today's ingredient, and how many dishes you have in mind to prepare. What is your opinion of today's ingredient?

*Barber now sweeps the cubed pork into a ziploc bag, picks up and opens a box of cornstarch, scoops out and dumps two large teaspoonsful of starch into the ziploc, and hands it to Keiichi.*
Barber: "Give that a good shake until the pork's well coated."
*Barber moves to the sink, fills a measuring glass with 2 cups of water and moves to the soup pot, quickly stirring its contents with a wooden spoon.*
Barber: "Good, we've got some caramelizing going on the onions here."
*He adds the water as Isao approaches with an ice-cube tray.*
Barber: "And what's that?"
Isao: "Leftover stock from Michiba-sensei's last battle. He said he didn't have any room in his freezers to take it home, so Kaga-sama had it frozen for future use."
Barber: "Kaga-sama is a wise man. So, would that be chicken stock?"
Isao: "Bonito stock actually."
Barber: *grinning* "Well, that's fine. Okay, let's put four cubes of that Michiba-stock into the pot then. And once it gets to the boil, turn the heat down and let that simmer while we get the stew ingredients going."
*The cubes go into the pot and Isao stands by with the spoon while Barber goes to the pantry for more ingredients.*

Fukui: Well, looks like Challenger Barber is taking a page out of Iron Chef Michiba's book... literally! Finding favor with the flavor of that one won't be too difficult, as it's already a favorite around here!

*Barber has switched on the wok burner and has started to heat a wok. He's shown mincing some ginger and a couple of garlic cloves as Keiichi approaches with the bag of now coated pork and a steel bowl containing diced onion and pumpkin cubes.*
Barber: *looks at bowl* "Good job, lad. Now set that bowl down here and get ready with the bag."
*He pours some peanut oil ini a swirling motion into the heated wok, sweeps up the minced ginger and garlic and tosses it in. The initial hiss of the aromatics increases to a roaring crackle as the cubed pork is poured into the wok. Barber begins to toss the meat in the wok.*
Barber: "Now go and get some bell peppers -- green and yellow, not the red."

(To Doc Hattori) How many ways is there to prepare pumpkin anyway? You can boil, bake and roast the pumpkin. However, commonly, there is only three dishes that use pumpkin in the United States, pumpkin pie, pumpkin soup, and mashed pumpkin. I wouldn't be surprised if both chefs based some dishes today on a close realitive of pumpkin, zucchini, and adapt some recipies that use that ingredient with pumpkin. We can see that the Iron Chef is using one recipe, mashed pumpkin, to augment his pasta dish.

Ota - Fukuu-san, I've been watching the challenger, Chef Barber prepare his dishes. He mentioned that while checking the fridge and some of the areas where "groceries" are kept he noticed there are lots of leftovers from previous battles, so he has decided to use much of them, being he is the very capable peasant chef that he is. This man is soooo talented. I think the tasting panel is in for a treat. Chef Barber told me that pumpkin is like a blank canvas that a chef who knows what they are doing can make into a work of art. He has that ability, he said.

Hattori: He has the right approach, however the Iron Chef knows that too. The key to winning this battle, I think, is to fully intergrate the theme into their respective cuisines, and I think that while the Iron Chef is venturing into Italian cooking with his pasta, it is a close call because of the strangeness of the ingredient outside of the "All Hallows Eve" holliday.

*Barber, checking the pork, is satisfied that it's browned. He empties the bowl of cubed pumpkin and onions into the wok, then reaches into a freezer bag that Isao's just put in front of him, and pull out a handful of fermented black beans which he tosses into the sizzling wok.*
Barber: "Once we get the browning process going, the stewing will be a snap. Isao, turn the other oven on to 450 degrees -- that should be about 230 Celsius. And Keiichi -- go and get the milk and eggs and get the blender ready."
*He continues to toss the pork, onion, pumpkin and black beans.*

*Keiichi leaves a bowl of chopped green and yellow peppers, which Barber quickly tosses into the sizzling wok. He continues to stir-fry until Isao sets a large Creuset casserole on the counter. Barber quickly loads the stir-fried meat and vegetables into the casserole, looks at the bottle Isao has in his hand.*
Barber: "That's cider, right?"
Isao: "Yes, but it's gone flat, Barber-sensei."
Barber: "That's all right."
*He pours perhaps a cup of the flat cider into the casserole.*
Barber: "Now we'll get that into the oven once it's ready."
