I seriously thought that the color was pretty dull, and the taste is clashing with one another, especially the texture of the noodles with the rest of the dish. Even I could do better, I'd say. Kaga: You could do better, eh? I seem to recall those words before, Sanji-san. Of course, don't take these words as an open invitation to fight again in Kitchen Stadium- I'm sure my Iron Chefs have had quite enough of you.

-----Post------- Misstee, don't worry this is a tough panel. Ironchefcanadian is right, this hot pot dish isn't going as well as I planned. There is still time for my doom. -----End Post----- Chen: No another challenge. I still have to finish this one. Maybe challenge Sakai-san? Now my last dish: The Jade Dragon and Phoenix: The red noodles with plum wine mix with the green tea noodles to provide the dragon and phoenix, The look reminds one of the tai-chi symbol like the balance the jade dragon and the phoenix. This last dish cools the tasters’ palate from all the heat of the previous dishes. The bitterness of the green tea is offset by the sweet red ginger-plum wine. -----Post----- Sorry about the picture. This is the best one I could find. -----End Post----- Chen: This well chilled dessert should cool the heat from the hot pot. You will feel the cool green tea while the the sweet plum wine refreshes the tasters throat. The noodles should be like swallows' nest. *Pour out the last of the strong tea to each taster and bows.* Chen: The tea should help in the digestion of all these dishes. Please enjoy and thank you all. *Bows again*

Kazuko Hosoki: This is a very interesting. It is visually very appealing but I am not sure your yin and yang flavors work. The opposite of bitter would be salty rather then sweet would it not? The bitter and sweet do provide contrast but I am just not sure the flavers compliment each other at all.

Yes, with the tea it unbalances it entirely.
You would have been better using a sour base, as well as or instead of the green tea, for your noodles to compliment the sweet plum wine. Then the tea would have stood on it's own and the two types of noodles would have complimented each other better.
It's a good idea poorly executed.

Kurimoto: "I'm actually finding the green tea to be somewhat overpowering in this dish. That could be because I didn't use all that much spices in the previous one, so I'm finding the strong flavour to be a bit overwhelming. The plum flavour is also pretty strong. The cold noodle texture is certainly pleasant, but I think maybe more delicate flavours might serve this dish better."

Chen: I was thinking of sour but was worried about the coolness it would have brought to this dish. I was worried that if this dish was to delicate the spices from the previous dish, would not be removed from the palate. But I can agree, this might be a miscalculation.

My wife has been bugging me to allow her to challenge an Iron Chef, and after seeing me beat Kobe-san, I can't blame her. *Sees Chen's last dish in front of him, and tastes it.* (to Chen) This dish provides a very unique concept. However, I must agree with the rest of the panel that the dish is poorly executed. Imagine my dental bill when I explain why tea leaves got into my dental work.

Chen: Tea leaves. The tea itself was brewed and the tea leaves removed. The green tea powder is ground very finely, so it wouldn't stick in your teeth.
