Hattori: Well, the order of presentation is always important in setting off each dish to it's best but I would say you are correct. It will be even more important with a high contrast in the spicyness of the dishes. I don't know why Chen-san says he's being less creative then usual however. I'm finding his cooking very interesting myself.

Morimote-san - Good questions, Ohta-san. Of course, this is a very unusual ingredient, one I'm not too familiar with but from what I can see from here, it appears both chefs are quite imaginative with it. What is prepared so far smells great. I'm just wondering how the tasting panel will be able to judge what tastes like cellephane noodles if it doesn't reall have a taste of its own? I wish both chefs good luck but only one will emerge the victor.

Ohta - Wong-san, I see you're back with IC Sakai. What does he have to say about the progress of the battle? Wong-san, yes, Ohta. I've seemed to ended back here by Sakai-san (how did that happen?). Chen: (Assistant 2) Check the icecream. It should be almost ready. After you take it out, mix in the powdered green tea. When that is ready, scoop it with the small icecream scoop on to a sheet pan and freeze it hard. Hey Sakai-san you want to trade places?
*Takes a taste of the sugared noodles. Slightly winces.*
Chen: Lets try this again. It is slightly too soft. Soaked the noodle too long in the sugar solution. Get me the crystal sugar cubes (rock sugar). I'm heating up some water now.
*Adds some red ginger syrup and the rock sugar to the simmering water. Adds some of the moistened mung bean threads and removes it from the heat to continue cooking off the heat. A slight splash of fragrant plum wine.*
Chen: We'll cook it more it needed, but it won't be jello like before. It will be like well cooked sharks fin. The noodles will be sweet and aromatic from the plum wine.

Moistening the noodles with some of the syrup and stirring until it shines under the lights. Placing some in a glass bowl and placing the bowl on crushed ice. The two bowls are sent up to Doc Hattori.*
Chen: Try some and tell me what you think. It should be like a cooling breeze off the water with a slight bitterness. This should be good after the jerky and spicy meat sauce from before.
*Cuts some Thai chiles and Chinese chives. Takes out three small sauce pans. Places some oil in each. Heats oil with barely any heat*

Assistant 1: Yes. And it's in the fridge.
Nakamura: Very good, My next noodle is a sweet but savory noodle. Refreshing citrus, pomograntes and mint and cilantro. Bring me some dry cellophane noodles and boil them. I'll make a sweet dressing.
Assistant 2: Yes, chef. The broths are great I just sampled them myself.
Nakamura: Very good.

Kurimoto: It's interesting, Fukui-san, that both chefs are opting for fruit flavors for their sweet noodle dishes. Obviously it's a good idea to have something sweet to counteract the spiciness of their other dishes, wouldn't you say?

It appears that the Iron Chef is making some chili oil. Nakamura is making a sweet salad with pomogrante seeds. The noodles and the seeds should compliment each other very nicely. He'll have to be careful not to break the skin of any of the seeds unless he wants to dye his noodles red.

Hattori-san, it seems that Chen-san is starting his hot and spicy dish. The use of Thai chilies and Chinese chives will most likely make this a dish that I can hardly judge properly.
