Fukui: Hey, Doc, you wouldn't mind sharing some of that, would you? You can't possibly eat it all, can you?

Fukui: What? Hold that thought, Doc! Half the battle is already over, and that means that the Iron Chef is only fifteen minutes away from having to stop cooking! Doc, as we approach this critical point in the battle, do you think it will affect the Iron Chef at all?

*Add the chiles in one, szechuan pepper corns in another, and Japanese black pepper in the last. Closes the heat and lets the ingredients steep. Takes three bowls and adds some of the following: light soy sauce, Chinese cooking wine, and a pinch of sugar. In a fourth bowl, a mixture of fish sauce, Chinese cooking wine, sugar and some roasted sesame oil. In one of the three previous bowls housin sauce is added with a couple of drops of Chinese red vinegar. One of the other bowls finely chopped ginger is added with a little rice wine vinegar.*
Chen: These sauces involve vinegar to cut some of the greasiness of this dish. It could be very heavy and therefore be torturous for our tasting panel. As always thinking about my customers.

Fukui: Chen-san sure is happy today, isn't he? I haven't seen him this playful in the kitchen in almost two years. It's good to see at least one chef having a good time out there today!

Ohta - Kukiee-san. I'm back here with our challenger chef Nakamura. He is laughing at the antics of our IC Chen, too. Guess they both are feeling good today. I think Nakamura-san is happy to be back working in KS again. NAKAMURA-san, how about a wave to your fans, as well!

Nakamura: *waves back*: I'm so losing it today, Ohta san. Seem like (hoping) we're ready to make some more preps. With the five dishes mapped out and preparing the best.

Hirano: I am looking forward to the sweet noodles on Chen's side today. That is the dish that stands out the most so far, I'd say.

Hattori: Honestly? Yes I do. Alot of that has to do with the nature of the ingredient.
As I said before, this is the perfect ingredient for the noodle rule. The Iron Chef should have little trouble and what cooking he has left should be simple to complete in the 15 minutes he'll have after the Ameritus Iron Chef has completed his presentation.

Chen: It is go time. Bring a good amount of the dry mung bean thread noodles. Get ready to place it in the oil.
*Places the noodles in the hot oil. It immediately puffs up. The noodles are then turned to cook the other side. All of the noodles are then removed from the oil. This is repeated to make seven servings. After all the noodles are fried, they are placed in the convection oven at low temperature to keep warm and to release excess oil (the noodles are on a sheet pan with plenty of paper to absorb the oil). The bowl with the mixture of fish sauce, Chinese cooking wine, sugar and some roasted sesame oil, some sambal with tiny chiles are added. In the bowl with hoisin sauce and a couple of drops of Chinese red vinegar some of the hot Japanese pepper oil is added (fizzing and popping as it is mixed in). The bowl with finely chopped ginger and a little rice wine vinegar, the sichuan peppercorn oil is added with the same effect. The last bowl contains soy sauce, Chinese cooking wine, sugar and hoisin sauce (this sauce is the sweet dipping sauce). Add more charcoal to the special hot pots.*
Chen: Each taster will have their own hot pot to cook the food by themselves. (Assistant 1) Don't forget to add some of the hot bean paste and chiles. (Assistant 2) Sprinkle a little more syrup on the cold noodles with the green tea powder.
*Mixing the mixture more and it shines under the bright lights. Takes a taste.*
Chen: This is great. Just great. It is coming out better than I thought! The sauces are done. The other thing are setup for the other dishes. Things going as scheduled.

Ohta - You got it, Kewie-san. (Running to the back room to talk to IC Chen). Chen-san, now you must sit here for the next fifteen minutes and watch as your noodles wait for you. How do you like that? What is your opinion of this ritual anyway, like do you think noodles should be an ingredient in these battles? How do you think things are going for you up to this point?
