Hattori: Yes I don't think he'll have much trouble finishing.
The only thing to be concerned with is the depth of his broths. Nakamura-san seems to be making several soups. One the one hand soup is the perfect setting for the ingredient today. On the other hand it is difficult to develop a deep rich broth in only one hour. Often we see the use of pressure cookers to overcome this handicap but the Ameritus Iron Chef has not only forgone this technique he has made at least three distinct broths. It will be interesting to see if he has had the time he needs to achieve the flavor desired.

Kurimoto: "I hope you're right. I'm curious to see how his presentations will turn out. I think he'll need a wide variety in presentation to really impress the judges, and there are only so many ways to do soup and noodles."

Nakamura (to the assistants) Bing cherries in the processor, and slice some citrus, yuzus, the oranges, the lemons and limes. The mint and cilantro is chopped and into another processor with some canola oil and those citrus juices. The sweet noodle is served with the sweet dressing on the side.
My salad noodles need to plated. My broths and noodles need to be in bowls. We now got 10 minutes, let's go.

Chen: I don't like waiting before cooking again. Many things can happen while I wait. That is why I'm waiting to the last fifteen minutes to do the actual cooking. Chinese dishes a serves best hot right out of the wok. I like noodles but having to stop cooking and restart, well that's the problem. To the producers, no more noodles battles please.
*Chuckling*
Chen: I think it will be a mad dash until the end. If I'm lucky, I'll finish all the dishes on time. I hope I won't need to abandon any dishes.

Hattori: If they are egg based it is possible yes and could be a problem. Other sauces could break down as well but they are more easily fixed within the time he will have. It is one very real danger and just another example of the expertise an Iron Chef must have to handle the challenges of Kitchen Stadium.

Fukui: Well, Doc, the Iron Chefs have proven time and time again that they can handle themselves here in Kitchen Stadium, and with TWO Iron Chefs on the battlefield today, there's no saying what can happen! Honorary Iron Chef Nakamura has approximately seven minutes left before his time is up! Kurimoto-san, what do think of Nakamura-san's performance so far?

Kurimoto: "I have to admit, I was a little worried at the beginning because he didn't seem to have a clear strategy compared with Chen-san, but it didn't take him long to get back into his game. I'm really looking forward to tasting the fruit dishes and I'm hoping to see some excellent presentation work. You'll remember, Fukui-san, his presentations during Battle Salmon in Paris. If he does something like that again, Chen-san will have his work cut out for him."

Michiba - Ohta, I have never seen celephane noodles prepared the likes of the dishes today. I'm so eager to hear the comments from the tasting panel, and perhaps have a bit of a taste myself.
