Jimmy James: We'll back home in the states the great pizza debate is rather or not "New York" style is better then "Chicago" style pizza. I guess in Kitchen Stadium it's "French" vs "Italian" styles of pizza. I'm afraid my vote is for "Italian" style. While the pizza tastes great I just really don't care for the 'crispy' crust. It's a personal thing. The presentation though looks very nice.

Sakai: Thank you. The next dish is a pecan crusted turkey breast. There is a fig sauce that it is resting in, and it should add some sweetness to the dish. The plate is decorated with saffron, to bring out the color of the dish. Please enjoy.
........dish............. Third is "Pecan-crusted Turkey Breast." In this third dish, the Iron Chef tried to combine sweet, salty, savory, and sour -- the main tastes. The pecan-crusted turkey is sitting in a bright purple fig sauce, which adds a wonderful, sweet taste to the dish. The nuts bring the sweet, while the turkey brings the savory. A wedge of lime is added for the tasters. They may choose to add the lime or discard of it, it is purely their decision. .........dish................

Kurimoto: "The pecans do a good job of enhancing the turkey's flavor, but I'm finding that the fig sauce is a bit strong."

Hosoki: To me the fig sauce is pretty impressive. With the hint of lime it's even better. You find good ways to make the turkey happier today.

Kanoh: This is a dish. Only the Iron Chef can transform a regular dish, to this kind of special height. The fig sauce seems overpowering, but turkey needs that strong flavoring to transform the turkey into something special. Great dish Iron Chef.

Kaga: And what do you think, James-san?

Jimmy James: Well, Kaga-san. I've always like turkey in any form and this is a great version of it. The turkey is cooked to perfection and the pecans add the perfect sweetness and crunch to the dish. While I"m not normally a fan of figs, this is a great combination for them.
I think it's a great dish. Very good.

Sakai: Thank you, thank you. Next we have a baked macaroni and cheese. This isn't your average, though. We've spiked it up with some truffles, different cheeses, and of course, ham. Please enjoy.
..........dish........... Fourth is "Macaroni and Cheese, Upscale." This may sound like an ordinary dish, but it is far from it. The dish starts out with a black truffle-infused cream sauce, which Sakai added to cooked macaroni. The cooked ham is cubed up, and thrown in this dish. The whole dish gets topped with Parmesan cheese, breadcrumbs, parsley, and more black truffle. Sitting on this dish is an edible flower. ...........dish..........

"I like the texture of it. Most definitely it's comfort food, and the truffle adds a very nice touch. But I think the dish lost sight of the fact that the ingredient highlight is supposed to be the ham. I don't get the impression that the ham is adding all that much to the flavour of it; in fact the ham could be omitted and the dish would still be good."

Hosoki: Well, to me, the ham really accentuates well with the mac and cheese. The truffles are a great kicker in this dish. It tastes soo cheesy when it melts in your mouth. I loved it overall.

Jimmy James: Oh yeah! This is more like it. Upscale Mac and Cheese.! This is a great combination of ingredients. The cheese goes very well with the ham and just adds a great savoriness to the entire dish. It reminds me of home with every bite. Mamma James always makes me a great big dish of Mac and Cheese when I come home to La Grange to visit. The memories take back home. <sniff>
Better stop mentioning mama. Last time I mentioned mama, Kaga-san tried to get me in trouble.
A great dish. Not as good as mama's of course, but very good indeed.

Kanoh: I must agree with Kurimoto-san. This dish is good but I had to ask, does the theme ingredient need to be in this dish? Could the theme ingredient need to be ham? The macaroni and cheese is great but the truffles don't elevate the dish. Macaroni and cheese can't be elevated to high levels but only you can get it this far.
