Ohta - Ku-san, the Iron Chef has his plates standing by and he is eyeing them just to make sure he has everything he needs when he gives the signal to start plating. I can see that his sous chefs are also waiting for the signal, and as usual, they are quite capable of being exact and speedy.

Sakai: Ohta, I think after all the turkey and ham being served to the judges today, a minty end to the meal is in order.
*Sakai plates the steaming hot ramekin filled with the macaroni and cheese on a white square plate*
*Sakai places a few mounds of micro greens around the ramekin, then adds sliced black truffles and a multi-colored pansy on top of the macaroni and cheese*
Sakai: Beautiful.
*Sakai begins to fry all of the rice balls*
*Sakai begins to slice the glazed turkey and ham*
*Sakai lays the turkey and ham slices on large rectangular plates, then spoons some of the glaze on them*
*Sakai spoons a serving of the cranberry foam onto each plate*
*Sakai begins to toss the broccoli in a maple and brown sugar sauce, then tops it with almonds*
*Sakai lays the glazed broccoli on the plate, along with the chive biscuit*
*Sakai decorates this large plate with sprigs of lavender*
Sakai: I need the peaches!
*Sakai adds fresh peaches into a pan with cornstarch, butter and sugar*
*Sakai adds some brandy, then purees the mixture in the blender*
*Sakai spoons the sauce into tiny bowls, used for dipping*
*Sakai removes the rice balls from the fryer, then arranges them on a plate with the dipping sauce*
*Sakai now removes the pizza from the oven, and slices it*
*Sakai plates the pizza in a deep square dish, drizzles it with truffle oil, and adds a fresh grating of Parmesan cheese on top*
*Sakai begins to spoon the fig sauce in a round dish*
Sous Chef Ni: The pecan-crusted turkey breast is almost done, sir!
Sakai: OK. I'm waiting on it.
*Sakai adds some edible gold leaf to the French pizza*
Sakai: All we need is the final turkey breast. I'll start blending the mint refresher.

Ohta - Kuewie-san, All I can say is wow! Sakai-san is preparing beautiful works of art with his food and plating. Very typical of him, of course. But he is going all out today.

Fukui: Thanks Ohta! Iron Chef Sakai's side of Kitchen Stadium is in overdrive as the final countdown draws near. Man alive, that's incredible!

Fukui: The last five minutes have arrived! This battle is incredible! Two theme ingredients, two great chefs, and only sixty minutes to create works of art! Ohta, do we have a final dish count for both sides of Kitchen Stadium?

Himura Akane: (to chef Ken) Toss the bitter greens in the vinaigrette please.
*Akane carefully slices the persimmon glazed, rosemary & magoram smoked ham. Chef Ken brings over some of the arugala and endive tossed in the foie gras vinegrette and Akane places a mound in the middle of a round white plate. The glazed ham is placed on top and some Gorgonzola cheese is crumbled over the top.*
Himura Akane: Good, now for the dessert. (to chef Ken) The ice cream please. (to chef Aoi) How is the white chocolate shavings coming?
Chef Aoi: Is this enough?
Himura Akane: Yes, bring it here.
*Akane takes the Matcha tea ice cream and making a round scoop places it carefully in the center of a square, white, plate. The triangle of crispy turkey skin with the shiso leaf showing from inside is stuck into scoop of ice cream. The dark chocolate glazed, chocolate marinaded, turkey cannoli's are leaned against the ice cream and shavings of white chocolate and sprinkled over the top.*
Himura Akane: Good *hears the countdown begin* now the broth for the soup.
*Akane takes the ladle from chef Ken and carefully pours the hot broth into the bowls with the yakitori skewers. She wipes the edge of the bowl clean and counts the dishes. A nudge here, a dab there. *
Himura Akane: Done.

Ohta - Fu-san, the challenger has prepared a total of five dishes; appetizer, salad with a lucious vinegrette dressing, soup, her main cours and a dessert. She has finished her plating. I'm heading over to the Iron Chef's station and will get back with you.

*Sakai blends the mint drink in the blender until it is smooth* *Sakai pours it over ice, shakes it, and pours the drink into a glass* *Sakai adds fresh mint to the drink* Sous Chef Ni: Here you go, Sakai-san. *Chef Sakai lays the pecan-crusted turkey breast on top of the fig sauce* *Sakai sprinkles some saffron around the plate, highlighting the bright purple color of the sauce* *As the final minuets of the battle count down, Sakai quickly chops a truffle finely, and mixes it with mayonnaise, olive oil, and lemon juice* *The mixture is lightly drizzled over the rice balls* Sakai: DONE! *Sakai, Ni, and Iti all take a shot of the mint refresher as the final seconds of the battle tick away* post... Fukui: All lot is riding on the verdict today for both chefs, and this looks like it will be one close battle!

Ohta - Sakai-san (bows to the IC) Great battle today. These are not ingredients you regularly use are they? The challenger made five dishes compared to your four. Does that surprise you? How do you think you did?

Ohta - Himura-san, WHAT A BATTLE! Two ingredients today. Was this a challenge? I'm sure you had to rack your brain to get one or two dishes out but you made FIVE! Tell us about it. It was a challenge. Fortunately the holiday theme of the ingredients gave me a few ideas and I ran with them. Once I decided what angle I was going to treat the ingredients from I had to complete 5 dishes to make the complete meal I wanted to serve the panel. Fortunately with some organization and perseverance we managed to complete them all, and I think, quite well.
