Okay everyone, it's time to vote for your favorite recipe and decide who is the winner of the second official site contest. Please do not vote for yourself, and you only have to reveal your vote if you want to.
The entries are:
1) Misstee's Sweet n’ Sour Chicken Strips on the Stick
Serves 6 (2-3 sticks per serving)
3 lbs Boneless Skinless Chicken Breasts
2.5 cups all-purpose flour
2 eggs
.5-cup water
Sweet & Sour Sauce – any brand
Salt & pepper
Chicken Seasoning
1 cup of chopped scallions
2.5 cups fine canola oil
30 bamboo skewers (soaked)
Prep:
Cut the breasts in to strips, like 1” thick, add salt and pepper and chicken seasoning to season the chicken, place the strips on to the bamboo sticks. Dip the strips into the flour (egg wash: add the water into the eggs and beat them for 30 seconds), then into the egg wash, then into the flour again. Heat up the oil in the frying pan. When the oil is nice and hot, place the chicken into the hot oil, 10-15 minutes on each side. When it’s done, take them out and place into the plate, be sure the plate is covered in napkins, For the sauce, use a brush, mainly a barbecue brush and glaze it on the fried chicken stick on both sides. Then top it off with scallions.
2) Arrianna’s Jambalaya . They say necessity is the mother of invention? A lack of Bay leaves and Bell Peppers created this.
2 Tbs X-tra Virgin Olive Oil
1/4-1/2 lb Bacon, diced
1 lb Bratwurst, cut in 1" rounds
2 Onions, chopped
5 Pepperoncini, diced
1 tsp Salt
1-1 1/2 lb Chicken breast, diced
2 Tbs Garlic, chopped
2 Tbs Soy Sauce
16 oz Tomato Sauce
3 1/2 cups Chicken Broth
2 cups Long Grain White Rice
Heat oil in a 1 gallon pot over medium heat. Add bacon and sausage and render the bacon. Add onions, pepperoncini, and salt and cook until onions are translucent. Add remaining ingredients except rice, stir well, and bring to a boil. Carefully add rice to the top of the pot and cover tightly. Simmer for 20 minutes, let rest covered for 10 minutes, stir and serve.
If rice is still undercooked re-cover and let it rest for an additional 10 minutes.
3) AC’s "Guaranteed Best Chicken Cutlets"
This recipe has been passed down from my grandmother to my mother, and now to her children. I can guarantee you that these will be the best chicken cutlets you've ever tasted. They are light, and crispy, and very simple to make! This is a very easy, yet satisfying meal to make for family, friends, or just you! Remember, the leftovers make delicious heros!
1 lb. Boneless chicken breasts, sliced thinly.
2 Eggs, slightly beaten.
1/2 cup Italian seasoned bread crumbs.
1/2 cup Parmesan cheese.
1 T. Garlic powder.'
2 T. Diced parsley.
Cooking oil.
Cooked pasta, optional.
Tomato sauce, optional.
First, mix all the dry ingredients together in a medium sized bowl. Then coat the chicken in the eggs. Remove the chicken from the eggs, and coat evenly in the bread crumb mixture. Next, pan fry the chicken until it is browned on both sides. When done, place the chicken on a paper towel, to drain the excess oil. Serve with the optional pasta and sauce. Garnish with parsley.
Serves AC...Err, four.
