Toshiro Kandagawa. He defeated IC Chen in his first sojourn into Kitchen Stadium, defeated IC Nakamura prior to the second Iron Chef's retirement, and IC Sakai in the 21st Century Battle Special.

Sorry, Sanji, but you're wrong. It was the Sabatini restaurant, who challenged Iron Chef Chen twice with sardines as the theme ingredient in both battles.
And incidentally, it was the Zagats who suggested Morimoto for Flay's opponent.

Answer: Robuchon toured the Kitchen Stadium set during Battle Truffles, when Yukio Hattori appeared as a challenger.
His assistant was Jacques Bories, who defeated Iron Chef Ishinabe in Battle Chicken.

I think the challenger's name was Tei something-or-other (not looking at the book, I can tell you this much). I can tell you he fought Chen in '93. The theme? Not coming to me...
