Chicken stew, with potatoes, carrots, onions, low-sodium broth, dry sherry and herbs. The thighs are sauteed in butter and olive oil in a cast-iron Dutch oven, and the whole thing is finished off in a slow cooker.

I overcooked last night's salmon dish. It was not pretty...

Sorry about your salmon, AC. I almost had the opposite problem with my pork chops - I bought the extra-thick ones and they took over 30 minutes to bake.
Tonight will probably be burgers; they have the earliest "sell by" date of the various meat in my refrigerator.

Ah yes, undercooked pork is a problem! Glad yours wasn't though, HC.
I have crab meat for tonight. Not sure how to prepare it yet...maybe with some pasta.

I just found out I'll have to stay 1/2 hour late tonight, so if I make dinner it will be something fast. I have one of those Lipton Pasta Side packets (Stroganoff flavor) and a piece of thin beef - I could make a quick beef stroganoff.

I had my corned beef two days ago. Maybe I'll break out my Irish Heritage cookbook. I'm trying to figure out what to have anyway.

Being of (partly) Irish descent, I am prone to wearing green on St. Patrick's Day. However, I generally don't make a point of "eating Irish".

well the corned beef isn't really Irish. It's be more authentic to use Bacon or some other pork. But it's what the boys wanted. It should be almost done actually.

Hubby wasn't feeling well yesterday, so we had a simple dinner of fried egg & cheese sandwiches.
Most likely tonight's dinner will be more substantial - he's feeling more himself today.
