Now I have another question. The frozen one's come in a boil bag. Should I just be able to open the bag and steam them in my own sauce or should I stick with the boil bag and the instructions on the back?

Like to doctor the sauce up. It's up to you. You can cook them in the bag and then after cooked open it, put the mussels in your own warmed sauce and serve, too. Use your awesome imagination.
