Status report: Everything is going precisely to plan, however, I am considering combining two of my dishes together for a total dish count of three.

Chu: "The reason why I had Ohta-san do a taste is because Japanese people may react differently than Chinese or American tasters when it comes to a particular dish. Watching Ohta-san's facial reactions, I can gauge if I'm close to what the panel tasters will like."
