As I was watching battle cod roe tonight, it made me realize just how much I enjoy watching Kandagawa evolve over the episodes...from pseudo-douchy toady to Ohta to his own culinary presence. Not much more than that, just an appreciation post for Kandagawa!

Rosdaddy - you're watching late-era Kandagawa. He really shined (in my opinion) in the earlier seasons, when he sent his first challengers to Kitchen Stadium and even challenged himself a few times (including Mr. Iron Chef 1994). But yeah, Kandagawa episodes in general are among my favorites, he is such a personality! For a special treat, check him out in the December 1996 New Years Special!

Kandagawa cleverly branded himself into a "villain" for the original Iron Chefs, and in doing so Kandagawa almost became Chairman Kaga's dark reflection. Those kinds of dramatic turns are why ICJ remains so special to this day!

This is a very nice primer on Japanese home cooking, with material on basic prep and cooking techniques: www.amazon.com/Modern-Japanese-Cooking-Home-Quick/dp/4915831825Many years ago, I met a woman in SF whose husband trained and apprenticed under Kandagawa-san, eventually becoming head chef at one of his many restaurants. She opined that he (and Ota-san) were absolutely charming and humble chefs who were much beloved by their employees and regular customers. Of course, Ota's Party of Heaven and Earth was an ICJ-inspired ruse, as we saw him offer some decidedly modern takes on J-cuisine in his Battle Octopus.

I always figured their personas on the show were crafted for dramatic effect, but it's great to hear that they were beloved by those who were in their orbit. Thanks for sharing that, tetsujin070561!
