We don't know exactly how much he had in his possession. But it did say that he had some at one of his restaurants. So I don't know if that will be taken into account.

Not quite. Marijuana is mearly the dried leaves and flowers. Hashish has been concentrated into a resin. I believe it's a lot stronger.

Yamada has the title of the Legendary Chef who created "cold pasta". There is a picture of him in the book, he is the one that was in a car accident that left someone dead, and he left the culinary world for a while.
