Stir-fried some chicken breast with carrot, celery, onion, baby corn and shredded bamboo shoots. (No, I wasn't thinking about the last RPG. Really.)

McD's tonight - I had to work late. I tried their new grilled chicken honey-mustard snack wrap. Not bad, except I would have preferred if there was more stuff/filling in the wrap. They were pretty skimpy on the lettuce, etc.

Pho, the easy way. Beef broth in the crock pot with pho spices. Added meatballs to simmer with the broth all day, came home, boiled water for the rice noodles, strained out the spices, chopped up basil and bok choy, rinsed bean sprouts and sliced a lime. assemble and eat.

Easter Sunday was roasted boneless leg of lamb with potatoes, carrots, and asparagus with tomatoes. Tonight was leftovers.
Arri, $4/lbs? That's expensive! I got mine for half that on the store's Easter sale (they had ham on sale too).

One of our local restaurants stopped carrying lamb dishes because they could no longer afford it. I guess there just isn't any local suppliers left.

Haven't had to cook the past couple of days because of our schedule. Last thing I made was beefy bacon pasta on Thursday night. I always make a double batch so there's leftovers for the next day's lunch.

Doing up a Cajun classic tonight: red beans 'n' rice. Red kidney beans, ham, celery, onions & green peppers have been cubed and gone into the Crock-Pot, seasoned with thyme and bay leaf and set to cook for 8 hours in water. It'll be combined with warmed Calrose rice.
