A few days from now is my parent's wedding anniversary, and I want to make a nice lunch for them. I figured that I'd make some stuffed tomatoes out of some leftovers that I have on hand. Here's the thing, I don't think that the mixture that I've made will work, and so I've come to you all for some second opinions on the matter.
My planned mixture for stuffing consists of equal parts of cooked rice(with sugar and 1 1/2 Tlbs of butter added before cooking), ground beef and peas.

The mixture doesn't sound half bad! But if you want another recipe, I have one saved on my computer- it's that good!
STUFFED TOMATOES
6 med tomatoes (not too ripe) 3 pkgs frozen chopped spinach, thawed & drained 1 med. onion, diced 2 cloves garlic minced 1 beaten egg 1/3 cup romano or Parmesan cheese ¼ cup dry bread crumbs ½ cup or so shredded mozarella 1 tbs Italian seasonings (basil, thyme, oregano) red pepper flakes to taste salt and pepper to taste topping: seasoned bread crumbs shredded mozzarella diced butter
Cut tops off tomatoes and scoop out seeds. Season insides of tomatoes with salt and pepper. Mix all remaining ingredients and pack tomatoes tightly. Place in a greased casserole.
Sprinkle seasoned bread crumbs, shredded mozzarella and diced butter on top.
Bake uncovered 25-30 minutes. broil 2 min to allow tops to slightly brown.
These are actually good cold or at room temperature as well as hot.

mmmm...spinach.
The ground beef and rice sounds fine. The peas might overcook unless the beef is precooked as well. A little seasoning and a binder like an egg or some cheese and you should be fine. I would use AC's recipe as a template and just adjust it for your ingredients.

Thanks, Mick. BTW, if you do make the recipe I posted, if you have any leftover, try one cold. It doesn't sound appealing, but it is good!
