This one's for you, AC (and for anyone else who loves good Italian food).
In north Phoenix (Bell Road at 35th Avenue, to be precise), is a wonderful Italian restaurant called La Vigna. It's got the best eggplant parmigiana I've ever had, bar none. Everything hubby and I have tried there is wonderful. The prices are reasonable, as well.
On the east side of town, visit Jerry Tucci's. Their eggplant parmigiana, though not quite as good as La Vigna, is very nice. They have a really tasty "cool cucumber" dressing as a choice to put on your dinner salad.

Mmm-mmm. Thanks for the recommendation, HC. If I ever do make it out to Phoenix I'd love to try. ('Course I'd have to go in the winter....the heat over there has to be brutal!)
