Here's a good one that I just made:
Chocolate Mint Cooler
1 cup milk 1/4 cup chocolate syrup 1 teaspoon peppermint extract Crushed Ice Whipped Topping, optional Mint leaves, optional
Crush ice and fill glass with desired amount. Blend milk, chocolate syrup, and peppermint extract together, and pour over ice. Stir, and add whipped topping, if desired. Garnish with fresh mint leaves, if desired.

KC, I think you could do like half of the syrup, and half of the liquor, but I've never tried it like that, so let me know if you do.

Orange Punch and Pimm's Cup
Orange Punch
1 6-oz. can frozen orange juice concentrate 1 6-oz. can frozen lemonade concentrate 1 6-oz. can frozen pineapple juice concentrate One half cup water 2 quarts ginger ale Orange slices Strawberry slices
Combine juices and water until mixed and smooth. Just before serving add ginger ale and garnish with orange slices and fresh strawberry slices. Makes about 24 punch cups.
The Skinny: Use sugar free ginger ale. We have been using that for years and we like it better than regular ginger ale. You can probably also find low fat or reduced sugar juice concentrates.
Pimm's Cup (this is for one serving, repeat as necessary and as often as needed)
2 measures of Pimm's Number One (you can get Pimm's Number One at most decent liquor stores) 2 measure of Ginger Ale or fizzy lemon-lime juice like 7-Up. 1 slice of Cucumber 1 slice of Lemon 1 slice of Orange 1 slice of strawberry Fresh Mint
Pour Pimm's into pint glass; fill with ice. Top with chilled ginger ale; garnish with slice of a slice of cucumber, lemon, orange and strawberry. Top with sprig of fresh mint.
The Skinny: Again, use sugar free ginger ale.
