Part of the reason why the Japanese chefs lost, was because the judges were american, and they weren't used to Japanese style cooking, so it tasted weird to them, and it was foriegn, so that's why the american chefs won, in my opinion that is. I agree 100%.

I read an article where IC Sakai said he was going to study up on what the American taste buds like before he opens a restaurant in the states. Good idea, I say. Of course if he opens a restaurant in Hawaii, it won't matter so much since people from all countries go there, looking for unique foods.

Mickey, how does a person's nationality affect their taste buds, it's just whichever cuisine you're used to and confortable with. Not necessarily. Depending on where you live, when very young you eat more of certain foods than people in other parts of the world. Your taste buds develop differently. You may get more buds that are for salty tastes if you eat lots of fish, or spicy seasonings, more sweet buds if you live in an area where grains make up your main meals, because they convert to sugars, or you may develop more bitter buds if you live in an area that eats lots of grasses, like certain areas of Africa. Eating habits begin at a very young age. I have lots of sweet buds born and raised in a place where we ate lots of grains, i.e., oats, wheat, corn, etc.) don't like salt. I didn't eat mushrooms (bitter buds) until I was in my late 30s.
